I suggest the following three themes so that you can choose according to the skills you wish to improve: No. 1 _Learn and master the various techniques related to handling chocolate and/or making macarons: Tempering, making various pralines, decorations of all kinds and delicious ganache candies. No. 2 Choux pastry in all its forms: Making various pastries using choux pastry: Cream puffs, éclairs, choux pastries, nuns, Saint-Honoré pastries Paris-Brest etc... No. 3_ Mastering leavened dough: Learn how to make delicious braided brioches, cinnamon rolls, croissants, and/or cougnous. The course takes place over a day of at least 6 hours, it starts around 10am and ends around 4pm. Pastry making will hold no more secrets for you, and you will leave with your finest creations of the day.
